Dr. Melinda Boyd is an Assistant Professor in the Health Sciences Department and Department of Nutrition. She has over 20 years of experience as a Registered Dietitian and is credentialed in both the US and UK. Her research interests include culturally appropriate nutrition care, diabetes management, community-based nutrition programming, and health disparities. She is a member of the Academy of Nutrition and Dietetics and the Association of Diabetes Care and Education Specialists. She has presented at numerous conferences and webinars on the topics of culturally appropriate care, inclusive language, and food nostalgia. She teaches classes in the MHS and MPH program, as well as the clinical course in the dietetic internship. She serves as the Cedar Crest College chapter advisor for Kappa Omicron Nu, a health sciences honor society. As a teacher, she aims to support all students on their journey into the fields of nutrition and public health, helping students explore various pathways to meet their career goals.
